Thin trays warp. You hear the bang at 200 °C, the tray domes in the middle, and the oil runs to one corner along with everything you were roasting. This one is 0.8 mm aluminized steel with a rolled edge around a steel rod, which is what stops it moving.
Browning, not steaming
Aluminized steel conducts fast and evenly, so vegetables brown on contact rather than sitting and sweating. The pale surface is deliberate — a dark tray over-browns bases before the tops are done.
Sized to fit
At 42 × 30 cm it fits a standard domestic oven with the air gap the shelf needs to circulate.

Care
Hand wash and dry immediately — aluminized steel is not stainless and will spot if left wet. Do not use abrasive pads. Discolouration with use is normal and does not affect performance.

Common questions
Why can't it go in the dishwasher?
Aluminized steel is not stainless. Dishwasher detergent and a long wet cycle will dull and spot the surface. Hand wash and dry it and it will last for years.
Will it warp at high heat?
It is rated to 250 °C without warping. The rolled edge around a steel rod is what gives it that rigidity.
It has discoloured — is that a fault?
No. Uncoated aluminized steel darkens with use. It does not affect how it bakes.
