Roti needs a surface that is hot, even, and stays hot when a cold disc of dough lands on it. A thin tawa loses its heat on contact and the roti steams instead of puffing. This one is 6 mm of hard-anodized aluminium — enough thermal mass that the temperature barely drops.
The handle matters
Cast iron, riveted on. It stays cool well past the point where a hollow steel handle becomes unusable, and there is no plastic to soften over an open flame.
A slight concave
The surface is very gently dished, so ghee gathers at the centre rather than running off the edge onto the burner.
Hard-anodized, not coated
The surface is the aluminium itself, electrochemically hardened. There is nothing to flake.

Care
Hand wash only — dishwasher detergent strips the anodized layer. Wipe with a little oil after drying. Do not use on induction; the body is aluminium.
Before you buy
Common questions
Does it work on an induction hob?
No. The body is aluminium and is not magnetic. It is made for gas and electric coil hobs.
Does it need seasoning like cast iron?
Not in the same way. A light wipe of oil after drying is enough — the anodized surface is already hard and non-reactive.
Why can't it go in the dishwasher?
Dishwasher detergent is alkaline and will strip the anodized layer, leaving raw aluminium. Hand washing takes a few seconds.
