Most kadais are either too shallow to fry in or too narrow to build a curry base in. This one is 11 cm deep across a 30 cm mouth, which is the proportion that lets you bhuno an onion-tomato masala properly and then drop in enough oil to fry pakoras without it climbing the sides.
Heat where it matters
The base is a 4.5 mm aluminium-core sandwich; the walls are thinner. Heat concentrates at the bottom where you are searing and drops off up the sides, so a masala reduces without catching at the waterline.
The lid earns its place
Tempered glass with a steam vent, so you can watch a dum without lifting it and losing the heat.
Two handles, deliberately
Loop handles on both sides — a full kadai at 4.2 litres is heavy, and a single long handle is the wrong tool for lifting it.

Care
Hand wash the glass lid. The body is dishwasher safe. Dry the rim thoroughly before storing so water does not sit between the lid and the lip.

Common questions
Is it deep enough for deep frying?
Yes. At 11 cm deep you can run 5–6 cm of oil and still have clear headroom, which is what stops spitting and boil-over.
How many people does 4.2 litres serve?
A curry for five to six, or a biryani base for the same. For a household of two, it is more kadai than you need day to day.
Can the glass lid go in the oven?
The body is oven safe to 260 °C but the lid should not exceed 180 °C. Finish uncovered if you are going hotter than that.
